First of all, as a side note, I've come to the realization in the past week that potatoes just may be my favorite food. I could eat them everyday. I've made potatoes several ways but never twice baked. I decided I would conquer it.
I only broke one little corner of a potato when I was scooping out the pulp, so I was pretty proud. Here they are, ready for the oven:

Although they do take a lot of prep time, they're not hard to make at all. And... they're totally worth it. Yum!
Now, for the tomato-ginger bisque. While we were in Maui, we went to Mama's Fish House. As one of their starters, they bring out a small tomato-ginger bisque for everyone. It was FABULOUS. Honestly, one of the greatest things I've ever tasted. I wanted to find the recipe. Obviously, it wasn't going to taste like Mama's Fish House, but I figured it would be close enough. So here is a bit of the process:
Another first ... peeling and seeding tomatoes. I boiled the tomatoes for a minute and then they were ready to be peeled.
It's starting to look like real food!

But guess what.
It was gross.
Yes, it tasted weird and not at ALL like what I had expected. Now, I'm no pro in the kitchen, but I can follow a dang recipe. I was pretty disappointed. Money - wasted. Ingredients - wasted. Time - wasted. I could've been mad and I really thought I might cry; but as Colt tasted it, his face turned into a twisted snarly look and I had to laugh. :) So, after all of that, Colt and I threw it out and had something else. And I was left with this:
