BFBN: 3 pumpkin recipes for fall


We're sharing some fun seasonal posts today on the Babywise Friendly Blog Network Pinterest account.  If you're not following us, you should be!

I decided to dig up three of my most favorite fall recipes, all of which involve pumpkin.  Of course.

#1 Two Ingredient Pumpkin Cake with Apple Cider Glaze

(Please note:  You literally mix the dry cake batter with the pumpkin puree - those two things only.  No eggs, no water, no oil, no nothin'.)  

Warning:  You may want to drink the glaze straight from the bowl after you make it. 

#2  Pumpkin Protein Pancakes

My sweet friend, Mirela, introduced me to these pancakes when we went to Portland back in May.  She fixed them for Norah and Duke each morning for breakfast.  Duke loved them!  I make a huge batch of them every once and a while and keep them in the freezer.  It's so nice to have a quick and easy breakfast solution for toddlers!

(Please note:  I usually quadruple the recipe when I make them so I can keep them stored up and ready to go.  Also, if you don't feel like using that many egg whites, you can substitute for some applesauce.  Or if you do feel like using that many egg whites, just save your yolks in the fridge so you can make the best chocolate chip cookies ever.)

#3  Pumpkin Coffee Cake with Brown Sugar Glaze

I haven't actually ever made this, but Reese has and I tasted it.  Lots of times.  And it was so good.  This coffee cake is also known as send-you-into-labor coffee cake.  I mean, technically it probably really didn't have anything to do with it, but I did start having contractions the day I ate it and Duke did arrive the day after.  Soo think what you want.

So excited to be welcoming in all things fall!
